I want to share this delicious Pineapple Banana Rum Punch recipe, that I tried last weekend. I have to confess something to you, I love gathering with good friends, for a relaxed/casual evening, its my favorite! This weekend we did just that! A super fun, last minute, backyard-get-together with lawn chairs, hot dogs, chips and Pineapple Banana Rum Punch. It was a night filled with lots of laughter & stories from our favorite couples. It’s March and while most of the country is still thawing, it was in the high 80’s here in Austin,Texas- which is perfect weather for this Caribbean/Texan girl.
Pineapple Banana Rum Punch was the perfect cocktail….a casual night with a glamorous- yet easy to make cocktail. I know what you are thinking, Banana Rum? But, It’s not as weird as you think, promise, and the combination of the banana rum, with the pineapple rum is very refreshing. Give this one a try!
Adding the raspberry and the mint was just a cute way to garnish this cocktail. You could also garnish it with fresh pineapple chunks.
Pineapple Banana Rum Punch
- 1 jigger (1 1/2 ounces) Pineapple rum
- 1jigger (1 1/2 ounces) Banana Rum
- 1 pony (1 ounce) Coconut Vodka
- 1/4 cup of pineapple juice
- 2 tablespoons of Topo Chico (sparkling mineral water)
- 1 cup of crushed ice
- Garnish: thin wedge of pineapple
