FRESH SALSA STUFFED AVOCADOS

DELICIOUS LUNCH OR AFTERNOON SNACK!
Recently I have been on an a health kick! Recent, as in, after I came home from my three week vacation 10 lbs heavier. Let’s pause for a moment while I weep. Anyways, I am not much a dieter, I am actually horrible at it. I can plan, shop & have all my veggies laid out & then what do I do? I grab a donut. Sooo, I don’t diet. I try to make healthy choices and live a balanced life (when I am not on vacation in Puerto Rico surrounded by delicious quesitos, guava filled pastries and pan sobao ).
In light of my vacation’s aftermath, I am challenging myself to start a workout routine; but that is another post, for another time. I am also back to eating conscientiously & wiser….cue the avocados. I have been adding & experimenting with different avocado recipes. Why avocados? Because they are packed with good fats, contain nearly 20 vitamins & minerals; they are a naturally nutrient dense food aaand because they are delicious!
1/4 of a small red onion (approx.)
1/4 cup of sliced cherry tomatoes (approx.)
1/4 of a small jalapeno pepper
1/2 tsp. salt
1 sprig of cilantro
1.Cut the avocado in half & remove pit
2. chop & add cherry tomatoes
4. chop & add jalapeno peppers
6. finish by sprinkling Himalayan salt.
Serve it up on a pretty plate, do the same with the other half of the avocado and enjoy a delicious lunch or snack!
