ROASTED ACORN SQUASH SOUP

The weather is getting cooler here in Austin, which means its time to gather some tasty and hardy recipes to keep our bellies warm! As a personal goal, I am trying to keep things healthy and trying to stick with the Autoimmune Protocol Diet. I am always looking for healthy lunch alternatives to salads. So the first recipe that I want to share with y’all is this incredibly delicious ROASTED ACORN SQUASH SOUP. enjoy!

Here is a list of the ingridients that you will need. I have shared the recipe step by step with my pictures and I have included a printable Recipe at the end of this blog..feel free to print!

  • Acorn Squash
  • Yellow Onion
  • Garlic head
  • Chicken stock
  • Dired Oregano
  • Salt

INSTRUCTIONS:

  1. Cut the Acorn Squash in half.

2. Using a spoon remove all the seeds.

3. Drizzle the Acorn Squash with Extra Virgin Olive Oil.

4. Then Sprinkle it with salt.

5. Flip the Acorn Squash and drizzle it with olive oil and salt.

6. Cut the onion in half. Place it on the roasting pan and drizzle it with olive oil and salt.

6. Place a garlic head on the roasting pan, and drizzle it with olive oil.

Place the roasting pan in a 375 degree oven for 45 minutes. The Acorn Squash should be fork tender and  fully cooked.

Carefully scoop out the Acorn Squash into a sauce pan. Add 4 roasted garlic heads and the roasted onion. Add about 2 tsp. of salt. Add 1/2 a cup of chicken stock and simmer for about 10 minutes. Using an immersion blender, blend all ingredients together in the sauce pan. Add about 1/4 of a cup of chicken stock into the sauce pan until you reach the desired consistency of the soup.
